I have been working on lowering the fat in a lot of the items I bake and with a few subs I can usually pull it off. I had a big craving for chocolate and these brownies hit the spot. As well, it makes a small pan for less temptation!

One of my ‘what do I have in the cupboard’ dinners It can be fun to see what I can come up with in a few minutes time!
Pesto Sausage Rice
Ingredients:
1 cup long grain rice (I used Jasmine)
1 large sweet onion, diced

I played around with a recipe and was quite happy with the results. Just enough fat that they don’t taste “low fat” but enough other items added to be really moist. Be sure to watch the time – don’t let them over bake.

It pulled together fast and was in the oven in a [...]

Kirk and I had joked about our needing to stretch a bit when eating out and our goal has been to try a new place now when we go out. Too easy to just drive down a mile and go to the local Mexican place (which don’t get me wrong serves great food….but still!).
So tonight [...]
Really Quick, Really Veggie Soup

I did the usual of “a little this, a little of that” to pull together this soup. We had it with a small loaf of Asiago cheese bread – the crust was perfect for soaking in the broth. I don’t salt my soup, so fair warning….to those who like salt this will need some.
Really Quick, [...]
