I often peruse Light Cooking for Two for ideas when I am making Kirk and I lunch during the day. Even then, I have used it for my stroganoff recipe for the family, I just double the recipe.
The book was first printed in 1995 and has a nice solid selection of recipes, not too trendy or dated so they work well 14 years later. The recipes are well laid out (1 to 2 per page) with the nutritional stats to the side of each recipe. The recipes don’t make huge portions so in some ways if you have a good appetite this book would work well as a solo diners book
The desserts have been fun, many work well being baked in my little toaster oven. A nice way to have something small and sweet while kicking back on movie night!
