Artichoke Salmon Pasta
Ingredients:
16 ounces spaghetti
1/4 cup extra virgin olive oil
1/2 cup Italian seasoned bread crumbs
1/2 Parmesan cheese
1 14-ounce can quartered artichoke hearts, drained (non-oil type)
2 Tbsp capers, drained and well rinsed

This was a quick and easy lunch I tossed together. I came across the spinach artichoke dip/sauce while out shopping this past weekend. The sauce/dip is surprisingly low in fat and calories…yay! For the pasta I used Barilla’s tiny bow ties – I love them in meals – they cook up quickly!
