Fresh New Yukon Golds

At the farmers market this morning were little Yukon Gold potatoes, just harvested. They were not cheap but so worth it! I picked up 2 lbs and for dinner tonight I made mashers out them:

I scrubbed the potatoes, trimmed them if needed and cut any of the bigger potatoes in half. Into a large/tall saucepan and covered with cold water I brought them to a boil and let gently boil over medium-high heat until fork tender. A quick drain and shake, then melted in a nice helping of Earth Balance spread, some dill weed and a pinch of pepper and a quick rough mashing.

Yum……….
